Walk-in cooler silicone finish at baseboards in process of replacement. Construction debris on floor. Food product physically separated to other half of cooler and no directly exposed food product visible in unit. OK. Walk-in cooler temperature less than 4 C. Dishwasher at 75 C at plate. General cleanliness good at time of inspection. **Make sure Quats solution in sani-buckets changed as per Costco Sanitation plan or more frequently depending on need. No more than 1 to 2 hours. Main feed dispenser at 200 ppm.
