Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Inserts of foods on prep cooler did not fit properly in their slots and foods were being maintained at 5-8 deg. C
Correction: Ensure all potentially hazardous foods are cold held at 4 degrees C or colder. Operator replaced inserts and rearranged them so that they would fit properly. Some inserts below were also moved to another cooler to allow for better cold air circulation. Foods below were being maintained at 2 degrees C. Monitor and track foods on top of prep cooler. Discard after 4 hours if not able to be maintained at 4 deg C. Call repairman if required.

Foods online are now being maintained at 4 degrees C. or colder.
Operator has begun to clean shelves in back area. Operator has removed fly strips from above prep area.
Further cleaning to be completed in one week.
Manager has registered for foodsafe and currently a worker onshift with foodsafe.
