Observation (CORRECTED DURING INSPECTION): Two compartment sink was being used to wash dishes instead of the dishwasher. Detergent was mixed with bleach.
Corrective Action(s): Reviewed the dishwasher operation procedure with staff on-duty. All dishes were cleaned and sanitized again with the dishwasher (dishes were used for lunch prep). Do not mix bleach with detergent as it reduces effectiveness of bleach solution. Staff demonstrated the procedure for making bleach solution and it was measured at 200ppm. Use dishwasher for dishes and bleach solution for surfaces.

-Upright two-door cooler: 4C.
-Upright single-door cooler: 4C.
-Continental freezer: -4C.
-Beverage cooler was only used for can pop.
-Handwash station supplied with hot & cold running water, liquid soap, and single-use paper towels.
-High-temperature dishwasher at 71.9C during final rinse at plate's level.
-Bleach solution was tested at 200ppm for sanitizing.
-Equipment are stored in sanitary conditions.
-Food storage was adequate with all foods off the floor.
-No hot-holding units were used during inspection.
-No signs of pests were found during inspection. No bait station was found indoors.
-Floors and walls were in clean condition.
-Permit and FoodSafe certificate were available with parish office.
