Observation (CORRECTED DURING INSPECTION): Less than 200 ppm Quaternary ammonium compounds sanitizer was measured in the third compartment sink, sanitizer spray bottle, and sanitizer pail.
Corrective Action(s): Person in charge manually diluted the sanitizer from the stock bottle to setup 200 ppm QUATS sanitizer in the third compartment sink, sanitizer spray bottle, and sanitizer pail. Ensure to monitor and maintain the concentration of QUATS sanitizer at 200 ppm to adequately sanitize food contact surfaces and equipment in accordance with manufacturer's specifications. QUATS test strips were available.

Observation: Less than 200 ppm Quaternary ammonium compounds (QUATS) sanitizer was dispensed from the dispenser.
Corrective Action(s): Ensure to repair or re-service the QUATS dispenser so that it dispenses 200 ppm QUATS sanitizer. Person in charge ordered replacement components for the dispenser that are expected to arrive within approximately 5 business days. Contact the Environmental Health Officer to provide an update once the dispenser is repaired or re-serviced to dispense 200 ppm QUATS sanitizer.

In the interim, ensure to manually setup 200 ppm QUATS by following the manufacturer's label directions and monitor the concentration using the QUATS test strips.

Comments

Handsink was supplied with liquid soap, hot and cold running water, and single-use paper towels.
Staff were observed washing their hands properly and changing single-use gloves.
Walk-in-cooler, sandwich prep. cooler, under-the-counter cooler, and beverage cooler were at or below 4 degrees C.
Walk-in-freezer was at or below -18 degrees C.
Hot-held food was at or above 60 degrees C.
3-compartment sink was supplied with hot and cold running water. Liquid soap and paper towels were also available via a dispenser.
Staff on shift held valid FOODSAFE Level 1 course training.
No signs of pest activity were evident at the time of inspection.
Pest control program was in place via the mall.
Permit to operate was posted.
Signature is not required on this report due to the COVID-19 pandemic.
