- All other hand wash stations (ie, food preparation area, dish washing area, washrooms...etc) were fully equipped
- All coolers (3 door reach in wall cooler, upright 2 door in kitchen, sliding two door in kitchen, prep cooler, domestic cooler in dry storage, small cooler in dry storage...etc) less than 4C
- All freezer less than -18C (3 chest freezers in hallway, 3 upright one door freezers in dry storage)
- Noted frozen squid being thawed under cold running water
- Noted cooked potatoes being cooled properly, spread out on shallow tray. Ensure potatoes do not exceed cooling at room temperature for 2 hours and are transferred to cooler unit to cool from 20C to 4C within 4 hrs.
- New racks obtained for sliding two door cooler unit in kitchen
- General sanitation satisfactory
- No obvious sign of pest infestation. Back door to kitchen was closed at time of inspection.
- Low temperature dishwasher had 50ppm chlorine sanitizer
- A follow up inspection will be conducted within this week to follow up on food handling/sanitizing infractions - operator has requested more time for the structural repairs/installations which are to be completed by the next routine inspection. |
