Observation: Noted cooked rice in a single use plastic container stored in the hot holding unit insert. Internal temperature of rice 49C - discarded at time of inspection.
Corrective Action(s): Ensure hot holding of rice is maintained at 60C or higher. Ensure hot holding unit is turned up high enough and do not double stack the plastic container inside the hot holding unit.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Sanitizer in spray bottle was too strong (bleaching out the test strip). Several wiping cloths noted to be stored on the counters and hanging on hooks throughout the kitchen.
Corrective Action(s): Dilute sanitizer in spray bottle and ensure it is maintained at 100ppm. Keep all wiping cloths stored in sanitizer solution to prevent microbial growth.

Observation (CORRECTED DURING INSPECTION): Hand wash station in the bar area did not have paper towel. A hand towel was hanging on the paper towel holder.
Corrective Action(s): Ensure hand wash stations have soap, paper towel, hot and cold running water at all times.

Observation: A) Lights above food preparation area does not have covers.
B) Staff washroom door across dishwasher and customer washroom door across ice machine were open at time of inspection.
Corrective Action(s): A) Obtain and install light covers/sleeves for the exposed lights in the food preparation area
B) Install self closing device/hinges on the washrooms doors

Observation: Noted frozen beef in sink with no running water.
Corrective Action(s): Ensure frozen potentially hazardous foods are thawed at 4C or less under cold running water or in the cooler unit.

Observation: Rice stored in plastic single use container was stored in the hot holding insert.
Corrective Action(s): Do not use single use plastic containers to store foods. Use proper food grade containers that are intended to be washed and sanitized (ie. reused). Ensure food containers are used as per their intended use (ie. do not store containers in the hold holding unit unless intended to be heated).

Comments

- All other hand wash stations (ie, food preparation area, dish washing area, washrooms...etc) were fully equipped
- All coolers (3 door reach in wall cooler, upright 2 door in kitchen, sliding two door in kitchen, prep cooler, domestic cooler in dry storage, small cooler in dry storage...etc) less than 4C
- All freezer less than -18C (3 chest freezers in hallway, 3 upright one door freezers in dry storage)
- Noted frozen squid being thawed under cold running water
- Noted cooked potatoes being cooled properly, spread out on shallow tray. Ensure potatoes do not exceed cooling at room temperature for 2 hours and are transferred to cooler unit to cool from 20C to 4C within 4 hrs.
- New racks obtained for sliding two door cooler unit in kitchen
- General sanitation satisfactory
- No obvious sign of pest infestation. Back door to kitchen was closed at time of inspection.
- Low temperature dishwasher had 50ppm chlorine sanitizer
- A follow up inspection will be conducted within this week to follow up on food handling/sanitizing infractions - operator has requested more time for the structural repairs/installations which are to be completed by the next routine inspection.
