Observation (CORRECTED DURING INSPECTION): 1. No sanitizer available at front waitress station
2. Dishwasher water has 50 ppm chlorine - water noted as very dirty (greasy and food debris)
Corrective Action(s): 1.Ensure sanitizer 100 ppm chlorine is available in all sections of premises were food is handled/ prepared with clean wiping cloths. Do not leave wiping cloths dry on the counters, store in sanitizer solution.
2. Dishwasher water must be replenished at least once a day if not more. Water in final cycle should be nearly clear and have at least 50 ppm chlorine detected. Dump, clean and refill dishwasher unit.

Corrective Action(s): Ensure food is covered when stored to protect food from contamination. Food stored outside of coolers must be stored in pest proof containers. Improvements noted in walk in cooler however more can be done.
Ensure all opened cans of food are emptied into a food grade container with lid if not completely used. Do not stored food in opened cans.

Observation: Mouse droppings noted under metal shelf and on wooden shelf where flour containers are stored.
Corrective Action(s): Ensure all mouse droppings are cleaned up and continue to monitor for current pest activity, if any.

Observation: Improvements in sanitation noted in storage room across from staff washroom and floors.

4. "Clean side" of dishwasher - food debris noted
5. Commercial hood panels above wok cookers covered in grease, fan above steam table covered in grease and dust and walk in cooler fan has dust debris noted on cover and ceiling.
6. Hard to reach areas - corners, under equipment
Corrective Action(s): Ensure the above areas are maintained in sanitary condition.

Observation: Cardboard box used to hold cooked chicken in walk in cooler. Box covered in grease/oils
Corrective Action(s): Suitable containers for storing food is smooth, durable, easy to clean and food grade. Do not store food in cardboard boxes especially when they are cooked. Discard cardboard boxes and exchange for suitable containers.

Comments

-Handwashing sinks in kitchen, serving station, staff washroom and public washrooms were supplied with liquid soap and paper towel
-Cooler temperatures were adequate (4 C or colder)
-Walk-in cooler was 3 C
-Sliding door cooler (kitchen) 2 C
-Counter top cooler 3 C
-Sliding door cooler 3 C
-Freezers were functioning and maintaining food in a frozen state
-Dishwasher met sanitizing requirement. 50 ppm chlorine detected on dish after rinse cycle.
-Bleach sanitizer (200 ppm) bucket with wiping cloth present for sanitizing food contact surfaces in main kitchen
-Tile cracks and gaps in floor appear to be sealed to allow for smooth surface through out kitchen
-Improvements in sanitation noted since last routine inspection - more can be done (violation noted above)
-Pest report for Oct 2018 reviewed "no rodent activity noted". Pest control devices available through out kitchen, improvements noted. Ensure the next 2 pest control reports are sent to Fraser Health for review and continue to follow pest control technician recommendations "improve sanitation". Business card provided.

Note:
1. Live crab aquarium appears filthy - brown mirky water, green grim growth on walls. At least 15 crabs in the 3 partitioned enclosure. Operator says it will be cleaned. Appears to be past adequate cleaning date.
2. Noted on high shelf above entrance to kitchen a clear plastic insert with dried fish in sea salt. Food not served to public, for staff only. Do not store food for staff in random areas of premises. All staff food should be stored together in designated location as not to be confused for food served to the public.
