Observation (CORRECTED DURING INSPECTION): 1. Found staff to be washing with soap only then towel drying bowls.
2. 3 compartment sink had <50 ppm chlorine
Corrective Action(s): 1. All dishes, utensils and equipment must be washed, rinsed, sanitized with chlorine bleach then air dried.
2. Must ensure 3 compartment sink has 200 ppm chlorine at all times. 1 tsp/5ml per litre water and change water frequently.

Observation: 1. Found sauces being store in opened metal containers.
2. Found boxes of food being stored on the floor in walk in cooler.
3. Found cooked shrimp being rinsed in dirty dishwashing sink
Corrective Action(s): 1. Must place contents of opened cans into reusable containers after being opened.
2. Must store all food at least 6" off the floor
3. Must wash, thaw and cool foods in a separate sink from the dishwashing area. Will need to install a prep sink to accommodate safe food handling practice. Submit plans by end of week as to where prep sink will be located.

Observation: Found back door propped partially open to allow for air flow.
Corrective Action(s): If need to have back door open for air flow must install a screen door to keep pest out. Door is to remain closed until screen door is in place.

Observation: 1. Found cardboard wrapped in tinfoil being used to cover food
2. Found corrugated plastic being used to line wire shelves.
3. Found tin foil lining shelves under cook line.
Corrective Action(s): 1. Use only approved food coverings (i.e. lids, plastic wrap or tin foil directly on product). Do not wrap cardboard then used to cover.
2. Do not use corrugated plastic as it cannot be easily clean and can be a place for pest to hide.
3. Do not use tin foil to line shelves as grease and pests can hide underneath. Increase cleaning instead of using tin foil.

- Spray bottles had 200 ppm chlorine
- No signs of pest activity noted during inspection
- General sanitation is satisfactory, some attention is required to inside of freezers.

NOTE: only 10 chairs our out front at time of inspection, however, 7 additional chairs and 3 tables are still on site. Remove all from premises or submit plans to the City of Burnaby and Fraser Health for the installation of a commercial dishwasher.
