Observation: Prep cooler was 16 C, after being on for a couple of hours, not being used at time of inspection.
Corrective Action(s): Cooler must be able to maintain 4 C or less at all times, have unit repaired or replaced. Continue to keep food in the other coolers until repaired. Place only minimal amount into the top portion during busy periods and discard after 2 hours.
