Observation: Mesh screen at the back door is broken, producing a large opening. Gaps exist around the door.

Observation: Accumulation of debris observed on the floors, shelving, equipment surfaces, handles in all areas of kitchen.
Corrective Action(s): Clean all noted areas. Focus on hard to reach areas (underneath and behind equipment) and high contact surfaces (handles, buttons). More frequent deep cleaning may be necessary. Date to be corrected by: October 23, 2018

- Hand washing station is equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in, pizza, small prep) at < or = 4C
- Freezers (domestic, chest) at < or = -18C
- High temperature dishwasher available but in use at night only. Cycle takes at least 1 hour to finish. Ensure it is capable of reaching 71C by measuring with a waterproof probe thermometer with min/max setting.
- Ensure any dishes washed manually are sanitized with 100 ppm bleach sanitizer for 2 minutes
- Two compartment sink available for manual dishwashing
- 100 ppm bleach sanitizer available in spray bottles
- No signs of pests observed during inspection. Pest control provides services monthly. Most recent report available.
