Corrective Action(s): Cutting board and utensils are to be washed, rinsed, sanitized and air dried throughout the day (every 4 hours when in use). Use 1 tsp chlorine bleach in 1 liter of water to make a sanitizing solution of 100-200ppm). Violation Score: 5

Comments

Large cooler and prep cooler - air temperature is <4 C - good. Monitor daily using your thermometers, Hand washing sinks (washroom and kitchen) have liquid soap and paper towels. Gloves are also worn and are to be disposed of after use as often as you would wash your hands. Bubble tea - tapioca pearls are made frequently and used within 2 hours (if > 2 hours, store in fridge or discard). Commercial dishwasher has a hot water final sanitizing rinse. Cleaning - ice machine is clean. Follow a routine cleaning schedule. Clean floor more frequently. Sanitizing - see above.
