-Bring a small number during busy time to be used in less then 1 hr and keep them on ice to maintain temp .

Observation (CORRECTED DURING INSPECTION): Cooked hot rice stored at room temp temp ( infrared thermometer ) was 26 oC
Corrective Action(s): -Operator indicated that steam oven was broken and rice was out less then 1/2- reheat to >74 oC and store in steam table keep hot at minimum 60oC

Observation (CORRECTED DURING INSPECTION): Dirty wiping rags noted in different areas on counter.
Corrective Action(s): Wiping rags must be washed and store in bucket of sanitizer between uses.

Observation: No paper towel liquid soap noted in one of the staff washroom-
Corrective Action(s): - Provide paper towel and liquid soap for all hand washing sink
-Operator reported that this washroom is not being used- it must be locked or sealed.

Observation: Noted house flies, some rodent dropping mixed with dirt.
Corrective Action(s): Clean and put more monitoring devices
-Pest control report (once per month service) indicated re: poor sanitation and poor repair in several times???

Comments

General:

- Hand sink equipped with hot/cold running water, liquid soap, and paper towel with exception of noted sink ( staff washroom)
- All coolers temperature at 4 degree or less
- All freezers temperature at -18 degree or less
- All hot holding units temperature at 60 degree C and above
- High temperature dishwasher final rinse temperature at plate surface measured at 76 oC
- Glass washer at the bar area iodine residual at the plate surface tested 12.5 ppm
- Bleach solution in buckets measured >100 ppm Quats sanitizer from the spray bottle tested 200 ppm
- Ice machine is clean, ice scoop for ice machine and ice sink are stored properly
- Back door remained close during services
- Health permit posted


** No log sheet on site re: monitoring data for coolers, freezers, hot holdings ( twice daily), temp of dishwasher and sanitizer level at least once daily
** keep serving utensils or tongs in cold icy water between uses and wash every 2 hrs


All the above must be addressed fully prior to follow up inspection, an action plan to be submitted to the area inspector no later then July 27-2023 addressing all noted issues.
