302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Low temperature dishwasher was supplied only with 10ppm of chlorine at the final rinse. They just changed the new chlorine /sanitizer bottle.
Corrective Action(s): The low temp dishwasher must be supplied with chlorine at minimum of 50ppm. Test strips are available for daily monitoring. Owner will manually add the bleach at the final rinse and monitor the concentration. She is going to contact the maintenance company and the follow up inspection will be conducted on Monday.

Comments

Met with the owner and we discussed the following:

- the FS certificated should be up to date. However, she could not provide any completion date nor the copy of the certificates.Please by Monday have a copy of the certificates available on site. The copies of the FS certificates can be posted in conspicuous location, and visible to general public.
- wiping clothes in the food prep area and sushi area must be stored in the bleach solution all the times ( not only at the end of day )
- in the future, please provide additional cooler/ especially during busy hours, the coolers are overstaffed/with additional cooler space you will store the food properly and in sanitary manner.
