Comments:
- Cooler units at 4C or less as required to prevent growth of pathogens in food
- Prep cooler (dough + pizza toppings) @ 2C for the bottom and 4C at the top. The left top side of the prep cooler runs warmer but contains only pizza sauces. The ones that are potentially hazardous (ie the white sauce) are thrown out every 2 hours. Was probed @ time of inspection and temperature was 8.9C. The sauce was at its 2 hour discard time and voluntarily thrown out by the operator. Recommend to also keep cabinet lid shut when cover is not in use.

- Freezer was at -18C or less as required and foods were frozen
- Foods are separated as required (ready-to-eat products like cut vegetables and proteins) and FIFO in place. No expired products observed.
