302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Low-temperature dishwasher does not dispense any chlorine at time of inspection. The stock bottle was empty.
2. Components of the deli slicer are in poor sanitary condition - this includes part of the blade guard. The area above it on the machine has an encrustation of grime and debris.
Corrective Action(s): 1. The stock bottle for the dishwasher must be changed out immediately.
2. Deli slicer to be properly cleaned-in-place and sanitized by today.

The dishwasher must always have a stock solution of chlorine to ensure that food contact surfaces are always cleaned and sanitized. You must keep a log of your dishwasher sanitizer concentration daily (>50 ppm) and have test strips on hand.

Observation: Ice machine has an accumulation of mildew on the inner lip of the device, as well as the metal grid where the ice is being formed.
Corrective Action(s): Empty out the ice machine and thoroughly clean and sanitize the inside in accordance with the manufacturer's directions.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Areas that require additional sweeping and/or degreasing:
- Behind the chest freezer in the kitchen area
- The sides of the deep fryer machine need to be degreased
- The tray underneath the soda fountain dispenser holster has an accumulation of mildew / grime
- Area around the used pizza tray area needs additional cleaning and degreasing
Corrective Action(s): Mop, clean, degrease the aforementioned areas. The tray underneath the soda fountain dispenser must be adequately cleaned and sanitized.

Comments

Routine inspection conducted of upstairs kitchen/grill area. Kitchen/grill area was not in operation at time of inspection. The following was noted:

1. Temperatures
- Stand-up coolers were at a temperature of 4C or less
- Stand-up freezers at back-of-house maintained -18C or below
- Milk cooler at front-of-house at 4C
- Prep coolers were all maintained at 4C (top and bottom compartments)

2. Hygiene and Sanitizing
- Hand wash station in kitchen area stocked with hot/cold running water, liquid soap, and single-use paper towels
- QUATS sanitizer spray bottle measures at 200 ppm QUATS residual
- Ventilation canopy generally well maintained
- Utensils, plates, knives are stored in good sanitary condition

3. Storage
- Raw products kept underneath cooked and ready-to-eat products
- Food is kept at least 6" off the floor
- Chemicals are stored separately from food products

4. Pest Control
- No evidence of recent, visible pest activity noted at time of inspection

5. Administrative
- Permit is posted
- FoodSafe 1 certification to be verified in follow-up inspection

A follow-up inspection will be conducted to ensure that the premise complies with health requirements.
