Observation (CORRECTED DURING INSPECTION): Spring rolls, raw eggs and sliced meat measured at 17 to 20C in prep cooler. Cooked vermicilli measured at 29C on counter.
Corrective Action(s): All noted food discarded. Ensure not to overstack food, cover when not in use and place unused food away in fridge at 4C or colder.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No bleach sanitizer in front bar area for wiping down seating tables.
Corrective Action(s): Directed new staff to mix 100ppm bleach sanitizer. Ensure to use bleach sanitizer and keep wiping clothes soaked when not in use.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Both kitchen handsinks had inserts and wiping towels inside. Repeat. A ladder was placed directly in front of the corner handsink making handsink inaccessible.
Corrective Action(s): Do not store anything in the handsink or in front of it. Handwash station must be accessible at all times. Staff removed all items at time of inspection. Further repeat of this infraction shall result in enforcement action.

Observation: Observed staff storing raw meat on top of pickled vegetables, and then relocated to store above cooked food after directing her to relocate.
Corrective Action(s): Always store raw meat on bottom shelves and never on top of ready to eat food, cooked or uncooked.

Observation: Fruit flies noted throughout kitchen and in hallway closet where soiled wiping clothes are stored.
Corrective Action(s): Increase sanitation of flooring and keep all food covered.

Observation: Food debris noted on stand up fridge shelvings, kitchen floors and under dish sinks, ice machine. Grease collected under fryer and on some fridge shelves.
Corrective Action(s): Clean and sanitize all these areas in one week. Declutter kitchen so cupboards are utilized instead of prep tables.

Observation: Kitchen tile flooring has several cracks allowing food debris to accumulate inside - noted in front of handsink, prep sink and mop sink area. Repeat.
Corrective Action(s): Replace said tiles so all flooring are smooth, non absorbent and easily cleanable. Complete in 1 month.
