Observation (CORRECTED DURING INSPECTION): Observed cooked meat (previously cooled down in the freezer/cooler) at room temperature when not in use. Temperature measured to be at 12-13 C
Corrective Action(s): Required operator to have all cold potentially hazardous foods to be held at 4 C or lower at all times when not in use.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Observed a knife stored under roll machine. Surface under the machine was not clean and knife when taken out had food debris on it. MUST DISCONTINUE
Corrective Action(s): Required operator to put knife in to the dirty dish sink for dishwashing after use then have it in the clean utensils shelve or in/on knife holder.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Found the following during inspection:
1. Observed dirty dishes and utensils being stored in one of the two compartment sink filled with water (bleach and detergent in the water; detected 200ppm of chlorine with test strip). Discussed manual dishwashing steps with the operator: operator explained dirty dishes and utensils in this solution; then washes with soap and water. MUST DISCONTINUE
2. Observed operator rinsing bubble tea blender with water using a brush; then put it back onto the blender for drying. No soap/detergent was used and no sanitizing step taken. THIS MUST DISCONTINUE
3. Observed sets of wiping cloths (fairly clean) to be sitting on food contact surfaces. Inquired operator to food contact surface cleaning and sanitizing procedures. Operator uses dry cloth to clean and sanitize the surfaces; then rinses with water for use later. MUST DISCONTINUE
Corrective Action(s): Required operator to follow the procedures below:
1. One compartment is to be filled with clean water and bleach to ensure that the concentration of chlorine detected is 100-200ppm. Put dirty dishes and utensils in the empty sink when not being washed. Wash (with warm water and soap/detergent) then rinse in that empty sink; then put wahsed and rinsed dishes in the sanitizing solution for minimum of 2 mins then air dry before going on to clean dishes/utensils shelves.
2. All dishes and utensils must be properly cleaned and sanitized after use immediately. follow manual dishwashing procedure explained above before using it for another drink.
3. All wiping cloths must be in sanitizing solution when not in use. A bucket of clean sanitizing solution was available on site at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Observed frozen salmon in a bucket beside two-compartment sink without proper coverage
Corrective Action(s): Required operator to follow proper thawing procedures:
1. In the cooler overnight with proper coverage
2. Under cold running water
As the facility lacks available sink to use #2, required to have all frozen food to be thawed in the walk-in cooler
