Observation: Ice build up noted on the floor of walk in freezer (near the door) and shelving units inside walk in freezer were covered with ice flurries. Staff stated that technician serviced the freezer a few weeks ago.
Corrective Action(s): Please contact your technician to address this issue and ensure that all equipment are maintained in good working order.

Comments

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk in cooler recorded at 3C
- Walk in freezer at -21C
- All coolers including front undercounter coolers and prep coolers recorded at or below 4C
- Hot holding units in the front service area and back kitchen recorded above 60C.
- Savoury pasteries were time tracked. Time stamps verified at the time of inspection.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.

Sanitation & Maintenance:
- General sanitation of the facility was satisfactory.
- Hand wash stations were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pails available throughout the facility and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- High temp mechanical dishwasher reached 74.9C on dish surface during rinse cycle.
- Ice machine were maintained in good sanitary condition. Ice scoops were stored outside in a sanitary manner.
- No visible signs of pest activity observed at the time of inspection.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate (Exp Feb 16, 2028).

Overall, good job in terms of overall operation and maintenance of the facility!
