Comments

All handsinks in kitchen and washrooms are supplied with hot & cold water, liquid soap and paper towels.
High temperature dishwasher achieved 71C during final sanitizing cycle.
All cooling units, sushi bar cooler and sandwich prep cooler at 4C or below.
All freezer units except sushi bar freezer measured at -18C or below
Quats spray bottle and dispenser measured at 200 ppm.
All hot held items at 60C or above
All light fixtures maintained
No signs of pest at the time of inspection.

Note: Bleach sanitizer solution in bucket bleached out the testing paper
-Ensure to mix 1 cap bleach to 1/2 full bucket of water to achieve 200 ppm.

Ensure hot held food items (cooked chicken, beef, vegetable and prawn tempura) are maintained at 60C or higher. If not, each metal insert of food items need to be time tracked and discarded after 2 hours.

Ensure water taps ( both hot and cold) are turned on to full volume when dispensing Quats at the dispenser. Quats is not fed through the line when the taps are not turned all the way.
-discuss this issue with contract company as it seems to be a design flaw.

-Replace the light fixtures in Janitor room.
