Observation:
The exhaust canopy filters have accumulated grease on them. Staff stated that these are only cleaned when the professional cleaning is completed by a company every 6 months. The accumulation of grease is a fire hazard and will attract pests.
Corrective Action(s):
Remove the filters and cleaning them to remove the grease. Soak them in a degreaser and scrub, then place in the dishwasher to wash and sanitizer them. The filters shall be cleaned at least every month, or more, to remove grease.

Comments

A routine inspection was completed:
- Coolers 4C or colder; containers of side dishes are stored in ice at 4C; freezers -17C; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 73.6C at the plate's surfaces, as per max/min thermometer.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on shelves, platforms, or racks.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good, improvement needed in the mentioned area (exhaust canopy filters and lower cupboard shelves).
- Exhaust canopy and filters were professionally cleaned in September 2023, next service due in March 2024 (as per service sticker).
- No signs of pests. A professional pest company services the premises every 2nd month.
- Valid, FoodSafe certified staff present.
- All equipment, utensils and cookware are in good working order.

ACTION
- The intestine case washing room STILL has raw wood shelves that require to be painted so they are sealed and easily cleanable. Paint with a light color.
- Food debris found on lower cupboards storing dishware and cookware in the kitchen. Clean these surfaces on a weekly basis to remove food debris. Ensure to move all items off the cupboard shelves, prior to cleaning them with hot soapy water.
- Clean the exhaust canopy filters to remove the grease, and ensure this is done at least once a month (or more, if needed).
