Observation (CORRECTED DURING INSPECTION): Observed hot held products at 45- 49 C. The water level in the unit was too low, not in direct contact with the food container. When inquired, operator indicated that the meatballs in the container were left in the warmer for more than 2 hours. Education provided that water level needs to be high enough so that hot water is in direct contact with the food container.
Corrective Action(s): Required operator to discard the meatballs in the container immediately. Water level must be increased so that it is in direct contact with the container. Operator removed the meatballs and discarded at the time of inspection. Water level increased so that the container is in direct contact with the water.
