Observation (CORRECTED DURING INSPECTION): Found foods in the hot holding unit to be 55 C, items are being added to the hot holding unit to be reheated.
Corrective Action(s): Must reheat foods to 74 C as quickly as possible (i.e. in the stove or on the grill) then place into pre heated hot holding unit.

Observation: Prep cooler was 6 C on the bottom and foods on top were 6 and 7 C.
Corrective Action(s): 1. Transfer foods on the bottom to the walk in cooler.
2. Use ice on the top to keep small portions of food items below 4 C until the unit has been repaired. After food service is complete move items to the walk in cooler. Only use portions that can be used with 2 hours.
3. Have unit repaired, and do not use other than for items stored as above during busiest items of operations.

Observation: Found can opener to be maintained in an unsanitary condition with food debris caked on to the unit.

2. Spray bottle had > 200 ppm chlorine
Corrective Action(s): 1. Have dishwasher repaired so it has a final rinse of 50 ppm chlorine. Once repaired rewash dishes that went through the dishwasher with <50 ppm chlorine.
Ensure to check concentration daily and record.
2. Ensure spray bottles have 100 - 200 ppm chlorine ( 1/2 tsp chlorine bleach to 1 litre water).

Corrective Action(s): 1. Must ensure all foods are sitting 6 " or 15 cm off of the floor.
2. Must place opened food items into a pest proof container.
3. All cooked ready to eat foods must be above raw meats, move to a higher shelf.

Observation: 1. Found heavy grease build up around the cooking area under, behind and between all cooking equipment.
2. Found food debris accumulating on the floors under the hot holding unit.
Corrective Action(s): A deep and thorough cleaning is required through out the premises especially in hard to reach areas under, and between equipment along the cooking/prepping area.
