Observation: 1. Food debris observed on surfaces of deli slicer located in upstairs prep area. Note: Upstairs prep area no longer in use today.
2. A small amount of mildew / biofilm buildup located within upstairs ice machine.
Corrective Action(s): Deli slicer to be taken apart and washed, rinsed, and sanitized. For ice machine, ensure that ice is discarded and interior surfaces are properly washed, rinsed, and sanitized. Ensure all equipment and utensils are maintained in sanitary condition to protect food from potential contamination. Date to be corrected by: Today.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No chlorine detected in rinse residual for bar dishwasher. Chlorine sanitizer jug was empty.
Corrective Action(s): New chlorine sanitizer was connected. Dishwasher was primed; however, no sanitizer was detected in rinse residual, even after a few cycles. Ensure all glasses that were washed in this dishwasher are placed through the main dishwasher to be properly sanitized. Do not use the bar dishwasher (chlorine) until it is capable of providing 50 ppm chlorine in the rinse residual.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: 1. Upstairs and server station hand washing sinks lacked hot water at the time of inspection.
2. Bar hand washing station was obstructed with a shaker and similar dishes / utensils stored in the strainer basket. No paper towel available.
Corrective Action(s): Above noted dishes / utensils removed from bar hand washing station and paper towels provided.
Ensure hot water is available at the above-noted hand washing stations. Date to be corrected by: August 13, 2019.
Ensure all hand washing sinks are unobstructed and adequately supplied at all times to facilitate proper hand washing.

Observation (CORRECTED DURING INSPECTION): 1. Upstairs ice machine scoop stored on cleaning pad.
2. Scoops for downstairs ice machine and bar ice bin observed to be stored within ice. Handle in contact with ice.
3. Open can of tomato paste observed in upstairs under counter cooler (right cooler).
Corrective Action(s): Scoops removed. Upstairs scoop to be washed, rinsed, and sanitized. Ensure scoops are stored in a manner that protects ice from potential contamination (e.g. in a clean, dry, container).
Tomato paste discarded. Once opened, ensure canned foods are transferred to an appropriate food grade container with lid. The integrity of the interior lining may become compromised once canned foods are exposed to oxygen, leading to potential leaching, particularly in the case of acidic foods.

Observation: Several fruit flies observed in multiple areas on the food premises, including, but not limited to, bar area, main dishwashing area, and upstairs warewashing area.
Corrective Action(s): Ensure fruit fly populations are minimized. Contact a licenced pest control operator to address fruit fly populations and ensure potential attractants (e.g. standing water, food, spills, debris) are removed. Date to be corrected by: September 12, 2019.

Observation: 1. Pooling water observed under 1-compartment dishwashing rinse sink.
2. Small gap observed under receiving door on left side (approximately 1 to 2 cm)
Corrective Action(s): 1. Ensure all pooling water is removed by today. Note: Leak may be present under sink. Have piping / joints inspected and repaired if leak(s) are present.
2. Ensure gap is reduced to limit potential pest entry. Date to be corrected by: August 26, 2019.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Debris / mildew observed in dishwashing area (floors, walls, equipment).
2. Walk in cooler floors, walls (including ceiling in some places) observed with dust / debris.
3. Pooling clear liquid observed on interior bottom surface of preparation cooler (central at prep / cook line). Note: No food in contact with liquid.
4. Dried spill observed on floor between upright freezer and prep table (downstairs).
Corrective Action(s): Ensure above-noted areas are properly cleaned. Food debris and standing liquid may potentially attract pest activity and may potentially lead to the contamination of food / food contact surfaces. Date to be corrected by: August 19, 2019.

Observation: Bar dishwasher (chlorine) was not capable of achieving 50 ppm chlorine in the rinse residual, even after chlorine sanitizer was changed and dishwasher primed.
Corrective Action(s): Ensure dishwasher is serviced so that it is capable of providing 50 ppm chlorine in the rinse residual at the utensil surface. Do not use dishwasher until such time. Date to be corrected by: August 16, 2019.

Low temperature dishwasher (kitchen) measured 40 degrees C and 100 ppm chlorine in rinse residual at utensil surface.
Bar glasswasher measured 12.5 ppm iodophor in rinse residual.
Temperature and sanitation logs maintained. Note: Ensure all dishwashers are being checked; only main dishwasher is being checked and recorded at this time.
Shellfish tags kept in binder on site.
Note: Wall / corner located near cook / prep line and oyster area has been repaired since last inspection.
*Preparation cooler at cook/prep line (closest to oyster/salad area) measured approximately 5 degrees C above. Ensure preparation cooler cover remains closed when not in use and monitor temperatures to ensure 4 degrees C or less is reached.
