Observation: Sizeable gap at the bottom of the side screen door in the kitchen.
Corrective Action(s): Install a door sweep to prevent pest entry. This will be verified during the next inspection.

Observation: Exposed wood on the floors of the walk in cooler.
Corrective Action(s): The operator is proposing to cover the exposed wood with a vinyl cover. This is only a temporary solution. The floors of the walk in cooler must be replaced by January 2019 with durable, easily cleanable material.

Follow up inspection to report #DSOG-B63TFZ:

- Sanitation has improved in the areas that needed attention. Ensure to implement a regular cleaning schedule and deep clean hard to reach areas on a weekly basis.
- Surface sanitizer available in designated white containers at 100ppm Chlorine concentration and presoaked wiping cloths.
- Most food items inside the walk in cooler and prep cooler covered with tight fitting lids or plastic wraps.
- The operator has updated the Sanitation Plan to include pest management.
- Submit a copy of the agreement with the Pest Control Company to the health inspector. This will be filed as part of your updated Sanitation Plan.
- The recent pest control report shows no pest activity. Ensure to follow the recommendations by the pest control company.

Note: This is another reminder that food preparation is NOT allowed near the dishpit area. This area is designated for dishwashing. There is a high potential for contamination of food if food is prepared in this area.
