Observation: Foods in the display cooler are not covered. Cooked rice is being stored under raw seafood/meat in the walk-in cooler.
Corrective Action(s): Cover all foods in the coolers. Always store raw meats/seafood below ready to eat foods and vegetables.

304 - Premises not free of pests [s. 26(a)]
Observation: Several mice droppings noted along ledge outside the walk-in cooler and under the cooking equipment in the same area, under dry storage shelves in the dry storage room, around the hotwater tanks. Operator has a pest control company on contract.
Corrective Action(s): Thoroughly clean these areas. Follow the pest technician's recommendations regarding cleaning.

Observation: Exhaust hood is overdue for servicing. The baffles have grease build-up. There's extreme grease/debris buildup under the cooking equipment in the kitchen, under the dishwasher and sinks, under the prep counter space. The display cooler has a buildup of food debris inside and along the door jambs and doors themselves.
Corrective Action(s): Thoroughly clean these areas and/or equipment.

Rice in several cookers is being hotheld above 60 degC
Dishwasher rinse had 50ppm chlorine
200ppm chlorine available for sanitizing
Bar hand sink and washrooms are fully equipped.
Orkin pest control is on contract. Service report reviewed for February 2023. Follow the technician's recommendations as discussed.
