Observation (CORRECTED DURING INSPECTION): -During time of inspection, curries on buffet line were probed to be 55C-58C
- Operator adjusted temperature and informed that staff filled steam table with cold water, instead of hot water
- Foods on buffet line were displayed <2 hr
Corrective Action(s): - Ensure all staff are aware that steam table and foods must be preheated to at least 60C before food can be stored/displayed for service.
- Ensure all hot foods are at 60C or hotter at all times when using hot holding units

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): During time of inspection, spray bottle of bleach solution/ chlorine sanitizer was not dispensing solution because feed tube was not reaching solution
- Operator refilled solution and corrected during time of inspection
Corrective Action(s): - Ensure that a sanitizer solution of at least 100-200ppm chlorine concentration is always available for sanitizing food contact surfaces

Observation (CORRECTED DURING INSPECTION): During time of inspection, handwashing station across from main cook line had pots and pans stored within
- Staff corrected during time of inspection

209 - Food not protected from contamination [s. 12(a)]
Observation: During time of inspection:
1) some foods were not kept covered with lids or plastics wrap
Foods in prep coolers, walk-in coolers, etc
2) Observed numerous milk crates containing peeled onions stored on the floor
Corrective Action(s): 1) Ensure to further protect foods from contamination by keeping them covered at all times
2) NO food items should be stored on the floor, must be kept at least 6" off the floor at all times !
- Staff corrected during time of inspection

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: During time of inspection, the following observations were made:
1) Pizza prep cooler (especially around fan cover) requires cleaning
2) Area around fan covers in walk-in cooler require cleaning
3) Moderate grease accumulation on metal slats of commercial fume hood (professional service due in Nov 2016)
4) Debris accumulation observed underneath equipment in kitchen facility
5) Food spillage observed on walls of facility
6) Hard to reach areas in need of cleaning (i.e., corners, behind freezers, etc)
7) Contact surfaces such as handles in facility, in need of cleaning
8) Slight oil/liquid spillage observed by dishwasher
9) Area underneath low temperature dishwasher in need of cleaning
Corrective Action(s): - Ensure the above mentioned is cleaned, sanitized and maintained on a frequent basis

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: During time of inspection, tiles acting as kickboard observed to be in disrepair by stairs
Corrective Action(s): Ensure any surfaces in the facility in disrepair are replaced or fixed so that all contact surfaces in facility are smooth, easily cleanable, impervious to moisture and durable

Comments

- Handwashing stations equipped with hot/cold running water, liquid soap and paper towels
- All temperatures meet health requirements except for the above noted:
* Walk in cooler at 4C
* Prep coolers at 4C
* Chest freezers at -18C
* Display cooler at 4C
- Low temperature dishwasher available, final rinse dispensing at least 50 ppm chlorine residual
- Thermometers available in cold holding units to monitor temperatures
- Test strips available for monitoring sanitizer concentrations
- No evidence of pests detected during time of inspection
- General sanitation of facility - can be improved
