Observation (CORRECTED DURING INSPECTION): Bleach sanitizer bucket was tested at 0 ppm chlorine.
Corrective Action(s): Refilled to 100 ppm during the inspection. Ensure that the bleach sanitizer buckets are refilled on a regular basis.

Comments

-Room temperature holding of pearls should be limited to 2 hours, not 4 hours.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Temperature records were up to date.
No evidence of pests. Pest control report reviewed during the inspection.
Chlorine solution in the 3-compartment sink was tested at 100 ppm.
General sanitation was satisfactory.
