Observation (CORRECTED DURING INSPECTION): 2 dozen of raw shelled eggs, half jug of milk, 2 packages of cheeses were stored inside the glass-door cooler measured with an internal food temperature of 11C. Cold potentially hazardous food must be stored at 4C or less to limit growth of pathogens and/or their toxins.
Corrective Action(s): Move the cheeses to the freezer and discard aforementioned raw shelled eggs and milk.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Quaternary ammonium sanitizer inside a bucket measured with a concentration less 50 ppm. 200 ppm is required to properly sanitize food contact surfaces.
Corrective Action(s): Discard and refill the sanitizer bucket with 200 ppm quaternary ammonium sanitizer from the dispenser. Clean and sanitize all food contact surfaces at the back kitchen with the fresh food sanitizer.

Observation: Glass-door cooler measured with an ambient air temperature of 11C. 4C or less is required to safely store cold potentially hazardous food.
Corrective Action(s): Fix/service the glass-door cooler to ensure an ambient air temperature of 4C or less can be maintained. Do not store any potentially hazardous food in this cooler until then. Correct by: Jul 21, 2021.

Observation: Thermometer inside the glass-door cooler indicated a temperature of -5C while the actually ambient air temperature was 11C. A visible crack observed on the thermometer.
Corrective Action(s): Obtain an accurate thermometer for the glass-door cooler. Correct by: Jul 21, 2021.
