A routine inspection was conducted, the following observations were made:
- Coolers 2C or colder; freezers were -22C or colder; hot holding units above 60C; thermometers present; and temperatures checked daily.
- Quats sanitizer in spray bottles and cloth buckets had a strength of 200ppm. Ensure to replace the sanitizer solution in cloth buckets every 2 hours.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All food stored in food grade containers; covered; labeled; date coded; foods stored in groups with proteins separate from RTE foods; and all foods stored 6" off the floor on shelves, racks, cupboards or pallets.
- General sanitation level is good. Great job in maintaining this level.
- Exhaust canopy and filters are clean. Next professional cleaning due in April 2020, as per service sticker.
- 3-comp sink method being used to clean and sanitize equipment, during the inspection.
- No signs of pests.
- Premises is organized and uncluttered.
- No expired foods in use or for sale. FIFO rules being followed.
- FoodSafe certified staff present.
- Handles on coolers (in grill area) have been repaired. The tape is no longer present and the surfaces are durable, smooth, sealed and cleanable.
- Floors in walk-in-cooler and walk-in-freezer are clean and non-slip.
