Observation: 1) Can opener found with dried on food debris
2) Road/ice salt found immediately adjacent to food salt, onions and potatoes (in milk crates)
3) EcoLab chemical container in use to store food products in walk in freezer
Corrective Action(s): 1) Clean and sanitize can opener as you would any other food contact surface. The cutting portion of the opener enters your food product
2) Separate food and non-food items, especially road salt vs food salt! They look very similar. Move raw produce like onions and potatoes away from the floor - elevate 6 inches
3) Never use chemical containers for food products. Chemicals can leach from the plastic long after washing

Two compartment kitchen sink supplied with liquid soap, paper towels, hot/cold running water
Dishwasher reached 50ppm residual chlorine sanitizer on rinse cycle
Quat sanitizer (newly installed wall mount unit) dispensing sanitizer at 200ppm.
Note: pink sanitizer must be available at all times to sanitize counters, cutting boards, food contact equipment, etc. Don't use orange multi-surface cleaner without a thorough rinse when using on food contact surfaces
Walk in cooler downstairs now minimally used for Old Surrey Restaurant - measured at 3C
All standing coolers (including newly added 2 door glass) measured 4C or less
Freezers all functional
No used oyster shells found on site - good. Shellfish tags on site and available on request
Note: better organization will be needed to do a quick and effective recall should it be required.
Basement storage area has been removed of clutter. Excellent!
General sanitation satisfactory. Some cleaning needed in hard to reach corners of upstairs kitchen.
No evidence of pests
