Observation (CORRECTED DURING INSPECTION): Handwash station at the back missing liquid soap. Replenished by the operator at the time of the inspection.
Corrective Action(s): Ensure all handwash stations in the facility are adequately supplied with liquid soap, paper towels and hot/cold running water at all times.

Observation: Accumulation of food debris/oil observed from the following areas:
1) underneath freezer drawers
2) underneath grill, above freezer drawers
3) on the sides of deep fryer/grill

Top surface of metal knife rack at the back requires cleaning.
Corrective Action(s): Ensure the above areas are cleaned on a more regular basis. Remove food debris daily to avoid attraction of pest.

Comments

Routine inspection conducted. Facility had replaced a prep cooler.

-Handwash station at front adequately supplied.
-Refrigeration temperatures satisfactory; Hot-holding temperatures satisfactory.
-Temperature monitoring system in place.
-General food storage practice satisfactory. Ensure all foods are stored at least 6inch off the floor at all times.
-200ppm QUAT available in a labelled spray bottle.
-High temperature dishwasher achieved 77.4'C at the plate level after final rinse.
-No evidence of pest activity observed at this time. Washrooms satisfactory.
-General sanitation other than the areas mentioned above, satisfactory.

The new prep cooler operating at <4'C at this time. Old one moved to the back, to be picked up later in the week.
NOTE: Ensure to obtain a thermometer for this unit.
