Observation: Light fixtures in kitchen were missing some light covers. The covers prevent glass from dropping into food if the light bulb breaks.

Observation: The wall, where the meat slicer is, has chips and peeling paint. Unsealed + damaged walls are not cleanable.
Corrective Action: Repair the wall so it is of a material that is durable, level, smooth, sealed + cleanable. Owner indicated he will be installing stainless steel on the wall.

Comments

General:
Coolers 4C or colder; freezer -21C; hot holding units above 60C; thermometers present; and temperatures monitored daily but not recorded.
- High temperature dishwasher was 76C at the plates surface
- Hand sink stocked with liquid soap, paper towels, and running hot + cold water.
- Foods stored in food grade containers; covered. Like foods stored together; and raw proteins stored on lowest shelves below RTE foods.
- General sanitation level is good.
- No signs of pests.
- Foodsafe certified staff present. BE ADVISED, certificates obtained prior to July 2013 will EXPIRE on July 2018. Go to www.Foodsafe.ca to register for the refresher course + obtain a valid certificate.
- Bleach present for sanitizing.;
