Observation (CORRECTED DURING INSPECTION): A few wet wiping clothes left on counter after use. Bleach sanitizer under sushi bar measured 0ppm chlorine.
Corrective Action(s): Place wet wiping clothes in 100ppm bleach sanitizer between uses. Sanitizer changed during time of inspection.

Observation: A few of the dishes wrapped in syran wrap are stacked on top of each other.
Corrective Action(s): Do not stack items vertically that are covered with syran wrap as it the syran wrap may fall off and expose covered food.

Observation: Food debris noted behind chest freezer across dishwasher and on flooring around standup fridge in sushi bar.
Corrective Action(s): Please clean and sanitize these hard to reach areas more often.

Observation: Bamboo flour sifter is no longer intact, has cracks and unable to be properly washed and sanitized.
Corrective Action(s): Replace sifter so the equipment is smooth, non absorbent and easily cleanable.
