Observation (CORRECTED DURING INSPECTION): Perishable foods in display cooler unit (yogurt, cut up fruits, sandwiches) in display cooler unit 8-9C to be discarded.
Corrective Action(s): Ensure all cold perishable foods are stored at 4C or less at all times.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Did not detect any sanitizer in spray bottle labelled as Novatek. Cloths were store in empty containers with no sanitizer. 100ppm chlorine sanitizer detected in spray bottled labelled bleach and water.
2. Noted dark mildew build up on the inside wall of the ice machine.
Corrective Action(s): 1. Ensure all wiping cloths are stored in sanitizer of adequate concentration to prevent microbial growth (100ppm chlorine solution or 200ppm quat solution)
2. Immediately discard ice and do a thorough cleaning and sanitizing of the ice machine. Increase frequency of ice machine cleaning.

Observation (CORRECTED DURING INSPECTION): Hand wash station beside dishwasher had empty milk jugs in it. Hand wash station across sandwich display case was covered with dishwasher rack that had clean cutlery in it. Both hand wash stations were fully equipped with hot/cold running water, soap and paper towel.
Corrective Action(s): Ensure all hand wash stations are clear and unobstructed at all times.

Observation: Display case cooler unit at 9-10C at time of inspection (as per probe and two thermometers in display case)
Corrective Action(s): Have display case cooler unit repaired or replaced. This issue has been noted on previous inspection reports.

Comments

Sliding 2 door milk cooler in dry storage, under counter milk cooler unit and prep cooler unit all less than 4C. Under counter 2 door cooler unit across cash register was not in use at time of inspection.
Good general sanitation. No obvious sign of pest activity noted at time of inspection.
Dipper well with stirring spoons running with cold water at time of inspection.
High temperature dish washer achieved 71C (with thermolabel).
All stored foods appeared protected (ie. stored off the ground, covered..etc)
