Observation (CORRECTED DURING INSPECTION): Numerous sauces that require refrigeration left out at room temp all day - both the large jugs and the squeeze bottles. In addition, the honey garlic sauce is left around 35C on top of the pizza oven.
Corrective Action(s): Pay attention to labels. Refrigerate product that requires refrigeration! Sauces can be left out for a max. of 2hours, then must be discarded. Discontinue this practice. As discussed, it would be beneficial to have another "set" of squeeze bottles for easy turnover.

Bleach sanitizer mixed in spray bottle at 100ppm. Good
Prep cooler bottom measured as low as 2C, however at start of inspection with lids up, product in inserts was MUCH higher. Ensure you're closing the lids while not in use to preserve safe food temperatures.
Chest freezer -24C
Temperature records on site, accurate, and available for review. Good
Discussed maintenance and regular inspection of veggie slicer. Do not use if blades become rusted and/or loose.
