Observation (CORRECTED DURING INSPECTION): One food scoop with a broken handle and blade was left in the under-counter bins.
Corrective Action(s): Removed during inspection - ensure any broken utensils or scoops are replaced as necessary - this will reduce the risk of potential physical food contamination.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: General sanitation requires improvement. In particular, cleaning is required for floors, areas under/behind large pieces of equipment (e.g. under corners of the dish sinks), and on some shelving.
Corrective Action(s): Clean and sanitize all affected areas (and implement a cleaning schedule with increased cleaning frequency) by the end of this week (9th October 2016).

Comments

*General sanitation marginally satisfactory - see violations section. No pest issues observed during inspection.
*Hand wash sinks in staff washroom and main bakery area equipped with warm water, liquid soap and paper towels. Note: alcohol hand sanitizer dispenser available at front counter. Ensure staff wash hands using soap and water any time they become contaminated - sanitizer is not a suitable substitute for hand washing.
*Storage of bulk goods satisfactory. Lids and bags kept closed for items not in use.
*Upright cooler and freezer temperatures satisfactory during inspection.
*Proofer maintained in clean condition.
*Tools and utensils stored in clean condition above dish sinks.
*Quat sanitizer available at approximately 200ppm (tested cold). Ensure this is maintained at 200ppm - test while at room temperature. Staff appear to be following full wash/rinse/sanitize warewashing methods.
*Flour bags and other food items stored off the floor.
*Note: discard the two dented cans of mushrooms by the end of today (staff state these are no longer required for bakery operation).
*Display management (6-hour shelf-stable) items are being logged in logsheets. Ensure staff record these as they are discarded (and not in advance for the day), as per past inspection reports.
