Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1)Dishes are not being washed properly. Dishes must be washed with soap in the 1st sink, then sanitized in the 2nd sink before being airdried.
2) Sink plugs are missing.
3) Not all sanitizer spray bottles had the appropriate concentration of bleach.
Correction: 1) Start washing dishes as discussed. Follow your Sanitation plan.
2) Purchase some sink plugs to enable dishwashing. This was brought up in a previous inspection as well.
3) Ensure that all sanitizer spray bottles have 100-200ppm bleach solution in them.

On Follow-up:
Spray bottles had 100ppm Bleach solution.
Sink plugs have been purchased. RECOMMEND PURCHASING ONES THAT ARE OVERFLOW PIPES/TUBES.
Dishwashing procedure now involves sanitizing dishes in 100ppm bleach solution in the 2nd compartment of the sink, after dishes have been washed in the first compartment. Proper signage for 2-compartment dishwashing is posted at the sink. Staff have been trained on proper dishwashing procedures.

Action Items:
The drain at the front service hand sink is still draining very poorly. Get this addressed by August 1, 2021.
Purchase chlorine test strips to monitor your sanitizer concentrations.
