Observation (CORRECTED DURING INSPECTION): Sanitizer bucket in the front service area did not have adequate sanitizer in it. The timer to indicate when the sanitizer should be changed was not in use.
Corrective Action(s): Ensure that staff are using the timer and that the sanitizer buckets are refreshed as needed.

General Comments:
Coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Hot holding unit was over 60 degrees Celsius.
Condiments were time stamped.
Food storage practices are generally good.
Hand sinks are stocked with liquid soap and paper towels.
Quats sanitizer was 200ppm.
Mgr on duty had FS level 1 certification (expires Aug. 4, 2023). KEEP A COPY OF YOUR CERTIFICATE ON-SITE.
Ecolab pest control is on a monthly contract. Service reports are on-site. No mice activity noted in the kitchen in the recent months.
Upstairs storage room is organized. The cooler was at 3 degC; Freezer at -19 degC. A dead mouse was noted inside one of the Ecolab traps along the wall.
