Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Operators had clean clothing for food preparation
o Staff washrooms appear clean and are fully supplied for hand hygiene
o Public washrooms are clean and fully supplied for hand hygiene

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C
o Hot holding food items are at 60C

Food Processing and Food Protection
o Cooling - Temperatures are being monitored
-Sausage rolls are being baked thoroughly and then cooled, displayed. Storage is limited to 2hrs. Ensure this is served and out within 2hrs. Recommend using timer system or tracking on charts or other methods of tracking
-Cream based fillings for donuts are displayed and sold within 2hrs.
-Sandwiches are held in cooler until sold, behind the counter.
-Long term: highly recommended to purchase a display cooler for cold holding items that require refrigeration
o Approved Food Source - Ingredients are from an approved source
o Food Storage - Food is stored in covered containers.
-Meats are stored on the lowest shelf and coolers are organized to prevent cross contamination

Maintenance and Sanitation
o 2 Compartment Sink is fully supplied 200ppm Quats for sanitizing (400ppm measured)
o Dishwasher - 50-100ppm Chlorine sanitizer
o Sanitizer bottles - have 200ppm Quats (400ppm measured)
o Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
-Some sides of equipment require wiping down, some food debris and dripping sugar. Operators were working on cleaning during the inspection.
o Pest control - Operators have a pest control contractor in place and there are no signs of pests at the time of inspection.
-Ensure to clean behind and between equipment and counters
o Sanitation Plan - Operators have a sanitation plan in place
