Observation (CORRECTED DURING INSPECTION): Chicken in hot holding unit was measured between 55 to 58C. Water bath where chicken insert is stored is barely 1/4 high.
Corrective Action(s): Directed staff to add water bath to ensure food in all parts of the insert can be kept over 60C.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer in the front retail area. Asked front line staff where sanitizer was and staff did not understand what it was until staff in the back helped.
Corrective Action(s): 200ppm Quats sanitizer is required to be used on food contact surfaces so the sanitizer station must be readily available. Please ensure this is communicated amongst all staffs.

Observation: A couple of mice droppings found in cupboard where taco shells are stored (bottom shelf), under cash register and most of the mice droppings are found in the back dry storage area under shelving units.
Corrective Action(s): Please remove mice droppings in all affected areas, then disinfect with bleach. Forward pest control report from last 3 months to the undersign for review.
