Observation (CORRECTED DURING INSPECTION): Raw fish stored at the under counter cooler near the deep fryer with an internal food product temperature at 7C. Operator stated the fish had been moved to this cooler from the glass-door cooler in less than 2 hours.
Corrective Action(s): Raw fish was moved back to the glass door cooler which has an ambient temperature of 3C. No potentially hazardous food shall be stored at the under counter cooler until it can maintain an ambient temperature of 4C or less.

Observation (CORRECTED DURING INSPECTION): 1. Knives stored in the knife rack near the walk-in freezer were also stored with street clothes and an rusted axe. Operator stated these knives were not in use. 2.Knife rack near the prep sink was dirty and rusted.
Corrective Action(s): 1. Remove aforementioned knives from the premise if they were not being used. Knives must never be stored with street clothes and utility equipment. 2. Wash and sanitize all knives stored near the prep sink before use. correct by: immediately

Corrective Action(s): Clean and sanitize the area underneath the deep fryers. Develop a cleaning schedule for this area.

Observation: The following equipment were not in good working order:
1. The under counter cooler near the deep fryer had an ambient air temperature of 7C.
2. Knife rack near the prep sink was dirty and rusted.
Corrective Action(s): 1. Service/fix the under counter cooler to ensure it can operate with an ambient air temperature of 4C or less. Do Not stored any potentially hazardous food inside until the cooler is serviced. correct by: Feb 15, 2019.
2. Replace the rusted knife rack with a new knife rack/container that is made from non-porous, smooth and easily cleanable material. Corrected during inspection.

Routine inspection:
- Glass door cooler near the cook line at 3C.
- Beverage cooler at 4C.
- Glass door cooler near the counter is not in use. No potentially hazardous foods were stored inside.
- Walk in freezer at -18C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 100 ppm bleach sanitizer registered from the low temperature dishwasher at the plate level.
- 200 ppm beach sanitizer available for use from spray bottle.
- No grease build up observed on the exhaust canopy.
- No pest activities observed.
