Observation: Low temperature dishwasher had 0ppm chlorine measured after final rinse. Priming the tube did not help the situation. Technician was contacted during the inspection.
Corrective Action(s): Ensure to have the dishwasher repaired and all dishware/cookware washed/sanitized through the dishwasher prior to the Friday evening event.

Comments

Routine inspection conducted:
Kitchen not in use at this time. No event until Friday evening.

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating below required temperature of 4'C; Freezers operating below required temperature of -18'C.
-High temperature dishwasher at front achieved 71.3'C at the plate level after final rinse.
-200ppm chlorine solution prepared in a bucket when kitchen is in use. OK. Bleach available on site.
-Ventilation canopy hood serviced and maintained.
-Tools/equipment maintained in sanitary condition.
-Front bars satisfactory. Drink dispensing guns/holders satisfactory.
NOTE: Ensure to have the inside of drink cooler wiped before using it for the next event.
-Traps in place. No evidence of pest activity observed.

General sanitation level of the facility good at this time. Follow-up inspection to be conducted on/before Friday, December 20, 2019.
