204 - Food not cooked or reheated in a manner that makes it safe to eat [s. 14(1)]
Observation (CORRECTED DURING INSPECTION): Three small containers of food were observed in hot holding unit. Temperature of water is noted at 53oC. Foods in containers appear to be cold. When asked, operator indicated the containers are taken out from cooler and placed directly on unit.
Corrective Action(s): Foods must be reheated properly before placing in a hot holding unit. Hot holding unit is meant to keep foods over 60oC, not for reheat.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Little water is added to the hot holding unit, only covering 10% of the container. This level of water cannot keep foods over 60oC. This has been mentioned in last routine inspection.
Corrective Action(s): Water level must be higher, covering all surfaces of the containers and foods, to keep foods over 60oC.
This is a second consecutive observation. Failure to comply may result in further enforcement action.

Observation: 1. Many products observed storing on ground (ie. pop, buckets, etc).
2. Open bag of dry good observed in storage room/office.
3. Bucket of vinegar observed storing in staff washroom.
Corrective Action(s): 1. Products must be stored at least 6 inches above ground to facilitate cleaning and for pest monitoring.
2. Store any open bags of dry goods in pest proof containers.
3. Washroom is not a place to store food prodcuts. Remove buckets from washroom.

Observation: Mouse droppings are observed in facility, on floor in storage room/office. Pest control company is hired by building but operator does not get a copy of the report.
Corrective Action(s): Remove droppings, sanitize areas, and connect with pest control. Operator should communicate with pest control technician on what needs to be done.

1. Purchase chlorine test strips to test sanitizer concentration.
2. Currently health operating health permit has a condition indicating "No grease laden vapour". Observed eggs pan frying on-site. Also, a domestic deep fryer is present. Will have to confirm with City if cooking foods that generate grease is allowed.
