Observation: Low temp mechanical dishwasher was run multiple times. No chlorine residual recorded during rinse cycle. Operator stated that he will have it serviced by next week.
Corrective Action(s): Please ensure that equipment/utensils/food contact surfaces are maintained in good working order. Repair the low temp mechanical dishwasher immediately.

Routine inspection conducted.

Note - At the time of inspection, back kitchen was not in operation. Operator stated that the kitchen is only used 3 times a week.

Observations:
- General sanitation of the facility was satisfactory.
- Temperature of coolers recorded at or below 4C.
2 stand up and 1 display cooler was turned off and not used for food storage.
- Chest freezers recorded at or below -18C
- Hot holding units was not in use.
- Handwash sink had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- Sanitizer spray bottle was available.
To prepare 100-200ppm bleach solution, it is recommended to add 1/2 teaspoon bleach (5%) in 1L of water.
- Low temp mechanical dishwasher in place.

- 2 compartment dishwashing sink used for manual dishwashing. Drain plugs and sanitizer bottle present.
- Food storage practices were found satisfactory.
- Operator has valid FOODSAFE Level 1 certificate (Exp January, 2026)
- Permit posted at the front.
- No signs of pest activity observed.

As discussed, a follow up inspection will be conducted to ensure dishwasher is maintained in good working order.
