Observation (CORRECTED DURING INSPECTION): A small volume of milk is being stored at 9 C in the bar cooler on the second floor. The seal on the right side door of this cooler is worn and there is an air gap.
Corrective Action(s): Store milk at 4 C or colder.

Observation (CORRECTED DURING INSPECTION): Main floor prep kitchen commercial dishwasher hot water final sanitizing rinse is only 54 C.
The Lounge area glassware washer does not have a detectable chemical sanitizing rinse for the final rinse.
Corrective Action(s): Ensure that all dishes and utensils are washed, rinsed, sanitized, and air dried. Use the second floor dishwasher or sanitize manually using 100ppm chlorine for 2 minutes or quats solution as per manufacturer's specifications. Verify that the sanitizing rinses are adequate when using the dishwasher (82 C water temp) and glassware washer (12.5ppm iodine).
