Observation (CORRECTED DURING INSPECTION): Glasswasher contained 10 PPM chlorine reisdual at the glass surface during final rinse.
Corrective Action(s): Repair or adjust so that it maintains 50 PPM. Operator called serviceman at time of inspection. To use bleach water solution for sanitizing until serviced.

General sanitation is overall good.
Liquid soap and paper towel with hot and cold running water at all sinks including test kitchen, tasting room and production area.
To offer charcuterie plates for customers in tasting room. To be made in commercial test kitchen. Please submit a food safety plan and sanitation plan for this service. Operator to apply for a temporary food permit until approved.
