Observation: Dishwasher is not working and has not been working in some time, as mentioned by staff.
Staff are using modified 3 comp sink method between the 1 sink and 2 sinks on either side of the dishwasher.
At the time of inspection, items looked like they were cleaned and stored appropriately in the sinks.
Quat sanitizer in the sink measured >200ppm (800-1000ppm).
This is acceptable for temporary use when dishwasher is not working but cannot be for long term and according to your Sanitation Plan.
Corrective Action(s): Fix and repair the dishwasher.
Use 3 comp sink method.
Ensure that dishes can be adaquately and fully submerged in the sanitizing sink.

Hand wash sink supplied with hot and cold running water, liquid soap and paper towels in dispensers.
Fridges and coolers <4C.
Freezers <-18C.
Prep tables appear clean and uncluttered.
Personal staff drinks are grouped together on one shelf, thank you.
Prep table at the back appears to be clean, staff was wiping down and sanitizing during the inspection, thank you.
Back hall and mop sink room and area could use some inventory - hard to get through due to boxes being stacked on either side.
Organize and install better lighting for cleaning and maintenance in this area.
Front service counter and prep counters appear to be clean.
No signs of pests at the time of inspection.
