Observation (CORRECTED DURING INSPECTION): 2 Large pots of soup base noted 46 - 54 C, both element turned off.
Corrective Action(s): Ensure all hot food is held at or above 60 C. Do not turn off heating element after lunch/before dinner. Must maintain continuous hot holding or start with fresh new base and a new pot before each meal. All base is discarded at the end of each day.

Observation: Low temp dishwasher noted with 0 ppm chlorine detected at the plate.
Corrective Action(s): Ensure dishwasher is sanitizing dishes at 50-100 ppm chlorine. Owner has technician coming in today to repair unit. Until corrected all dishes must be:
1. Washed in dishwasher
2. Soaked in sanitizer bath (100 ppm chlorine) in 2 comp sink for 2 minutes
3. Air dried.

2.Grease trap smells very strong in dishpit
Corrective Action(s): Ensure premises is maintained in sanitary condition. Hood is scheduled to be cleaned this week. Grease trap is coming up to 1 month cleaning.
