Observation (CORRECTED DURING INSPECTION): One pot of pasta sauce observed to be stored in main cook line prep cooler. Internal temperature 55 C as per DeltaTRAK thermometer. As premises does not open for dinner Monday, this was intended to be cooled over night.
Corrective Action(s): Pasta sauce put on ice water bath at time. You must cool from 60 C to 20 C in 2 hours, 20 C to 4 C in 4 hours. To accomplish, use ice bath and divide into shallow pans.

Sanitizer bucket empty but residual concentration of rags ~ 200 ppm chlorine detectable.
Main cook line prep cooler insert level (chorizo) 3 C, undercompartment 3 C.
No hot holding as premises was already closed.
Standup cooler 3 C. Salad prep cooler insert level (cheese) 1 C; undercompartment 3 C.
Rear cold holding units: fridge - 1 C, standup freezer "ICE" - 30 C, dessert freezer - 24 C.
Deli slicer in satisfactory condition.
