Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: High temp dishwasher is not reaching a sanitizing temperature. (66 Celsius max at plate level) Consult a dishwasher technician to repair or otherwise solve the problem. Note that dishwasher booster heaters are designed to increase water temperature by about 20 Celsius; if incoming water temperature is far below 60 Celsius then this might be the underlying issue.

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: Premise has a 65 liter hot water tank and business is constantly using hot water. Hot water temperature at tap is about 40 Celsius at time of inspection. Hot water capacity must be increased asap to ensure that dishwasher reaches adequate hot water temperature and that all other sanitary needs can be met. .

Follow-up inspection
High temperature dishwasher registered at 74 C during the final rinse.
Operator stated temperature setting for dishwasher has been adjusted by the technician.
Sink was set up for manual warewahsing as well with 200 ppm chlorine for the sanitize step.
