Follow up inspection.
All outstanding issues have been corrected:
Both coolers were re-serviced and refrigerant was added into one of the coolers based on the technicians' report.
The upright glass cooler was at 3.2 degrees C (4 degrees C or less).
The second prep. cooler was at 2.3 degrees C (4 degrees C or less).
A probe thermometer was available. Reminder: Ensure food (e.g. rice) is cooked to at least 74 degrees C internally and hot-held at 60 degrees C or hotter.
Items in the dry storage area were stored off the floor.
Knives were stored inside a clean container between use.
